Spelt is one of the original ancient grains, alongside einkorn and emmer. A cousin to modern wheat, it is high in protein and has an extremely soft texture, with a rich, nutty flavor profile. Domesticated between 5000-7000 years ago, spelt is a little lower in gluten (and as such can be easier on digestion) than modern wheat and is typically be more delicate to hydrate and handle in bread recipes. Try swapping 1:1 for all purpose flour in cookie, scone, and muffin recipes, or adding up to 30% spelt flour in your bread baking adventures.
