This is one of the stronger hard wheat varieties we have used in our sourdough recipes, suitable for 100% applications as well as a portion of recipe substitution. We love this blended with all purpose, bread flour, or paired with ancient and heirloom flours. Try in scones, cookies, pancakes, and bread.
